Now, I’m not a HUGE fan of enchiladas. In fact, the only Mexican food I’ll actually go out of my way for is a burrito. But these enchiladas are amazing, it might be because I was absolutely starving when I ate these, or it could be because they had homemade guacamole on [...] This was something I whipped up for lunch last week before leaving for LA.
