Peanut Butter Chocolate Chip Cookies

I’m back from a very strange cold. It started with a cough and then worked its way backwards. Very Benjamin Button of it. Anyway, here’s a tale of Peanut Butter Chocolate Chip Cookies. 

How I get roped into these things I’ll never know. My boyfriend was visiting and my roommate’s boyfriend, John, was also over and it really went downhill from there. We’re all watching some movie, I still don’t know which one it was, but I made some classic Rene comment and my boyfriend looked at me and said “why aren’t you making me delicious baked goods” to which John responded with “Peanut Butter Cookies!” just as my boyfriend said “Chocolate Chip Cookies!” sooo we combined them and got Peanut Butter Chocolate Chip Cookies.

For the record, I HATE peanut butter cookies. I like peanut butter. I’ve been known to eat it straight out of the jar. I looooove peanut butter and jelly sandwiches…I don’t like peanut butter cookies though. I think it has something to do with the baking process. To me the peanut butter gets concentrated or something. The smell is waaay too overwhelming for me. However, having people around who like them allows me to make them anyway :).

Anyway, back to the recipe on hand. So I made these from the Betty Crocker recipe for peanut butter cookies and just added a cup or so of chocolate chips at the end. We used Smart Balance because that’s what we had on hand – my boyfriend commented that it made have a slightly chalky taste/texture (I forget which it was, I just remember the chalky part). So note to self and anyone else – don’t use Smart Balance for the peanut butter. There probably isn’t enough fat in the peanut butter. Just my theory though.

All in all, the dough was apparently rather good as were the cookies. My boyfriend and John did diversions so they could sneak some and at one point John stole the whole mixer bowl of dough. Harumph. Pooheads. If I’m going to make you cookies, you better well wait until they’re in cookie form! Harumph.

Peanut Butter Chocolate Chip Cookies
Adapted from Betty Crocker
1/2 cup sugar
1/2 cup packed brown sugar  
1/2 cup peanut butter (I used Smart Balance. Please do not do this)
1/4 cup unsalted butter
1 large egg
1 1/4 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt (If you use salted butter omit the salt)
1 cup (or more) of Chocolate Chips

1. Preheat oven to 375

2. Beat sugar, brown sugar, peanut butter, butter and egg until creamy. Stir in flour, baking soda, baking powder, and salt. While no one is looking take your bag of chocolate chips out and put in as many chocolate chips as you want. If you sneak a few no one will know.

3. Use a cookie scoop (I <3 my cookie scoops) or thwap down tablespoons of the dough on a parchment lined cookie sheet (or ungreased cookie sheet). Place or thwap 3 inches apart.

4. Bake 9-10 minutes. Let cool on cooling wrack.
